Comfort Food: Meatloaf

So the forecast is calling for *dare I say it* some snow flurries--since the temps will dip low at night.


GEEZ LOUISE--can't fall just be fall? Must we rush the seasons?


This calls for some COMFORT FOOD.


Here is my meatloaf recipe (revised since receiving it from a friend).


I used to hate meatloaf...until this recipe!


It's all about the sauce!


**Mix a pound of ground meat with a packet of Stove Top stuffing (I use the whole wheat kind), an egg and some ketchup (to help moisten).


** Form it into a loaf


**Next, mix 1/2 cup of brown sugar, 1/2 cup of water, 1/2 a tablespoon vinegar, 1/2 cup of ketchup and 2 tablespoons of mustard (to taste--you want it on the sweet and tangy side).


** Pour half of the sauce on the loaf. Put it in the oven for 50 minutes at 350 degrees (it won't dry out!).




** Pour remainder of sauce and continue cooking for 10-20 minutes (depending on your oven).



The brown sugar darkens the sauce.

I make my meatloaf the same way! Well, I skip the sauce and just top it with ketchup while it bakes, but I definitely do the stuffing. The best part about meatlaof? Sandwiches the next day! Sometimes I just make meatloaf so I can have sandwiches later! I definitely now know what I'll be making for supper tonight!

i love meatloaf, i'll have to try your sauce. i make my mom's classic Polish recipe which involves two small slices of day old bread moistened with milk, chopped fresh parsley, an egg, salt and pepper. also she uses a pork/beef blend (if you use whole foods meat it's a delicacy!). this is making me hungry....

Thanks for the recipe. It was delicious! No complaints from the kids for a change. I halved the brown sugar in the glaze and it was still tangy-sweet and good. Thanks again!

Made your sauce recipe but with Betty Crocker's meatloaf recipe (only because I didn't have any Stove Top Mix at home).
