Recipe: Chicken with Green Beans and Feta


This is a PERFECT spring/summer recipe.
Light, healthy, and refreshing!

Ingredients:

4 chicken breasts, cooked and cubed

2 tbsp. olive oil

1 lemon (or lemon juice)

1 cup of fresh green beans

1/2 cup feta cheese, crumbled

1 tomato, chopped

1 avocado

salt and pepper to taste

1. squeeze lemon juice over the cooked chicken


2.Boil green beans. Toss them in a bowl with 1 tbsp. of olive oil, crumbled feta and tomato.


3. Add in cubed chicken and avocado. Drizzle with olive oil. Season with salt and pepper.

Feta is my favorite. You know, I hated avocado until I was pregnant the last time. One day I was just sitting around and I NEEDED some guacamole. Now I want it all the time. Great recipe... Thanks!

P.S. My word verification is "Cuerse", as close to "Curse" as it gets. When my oldest was around 2, the Lion King was his fav and somewhere along the way when something wasn't going his way he would say "Curse you Elephant graveyard!!"... I don't know why but it's freaking funny. So now, when something isn't quite right, my husband and I shout it. Somehow, it makes the moment a little easier!
